Introduction

Here is your omelette baked in a muffin pan. You can play with the ingredients. Add what you have on hand. Here is your omelette baked in a muffin pan. You can play with the ingredients. Add what you have on hand.
Number of Servings: 6

Ingredients

    2 eggs
    1 cup of 1% milk
    3 slices of lowfat shredded cheddar cheese
    1/2 diced tomato
    half of a red and green pepper (or whatever color you have)
    handful of chopped spinach
    salt, pepper and parsley to taste
    not included: ham, sausage, proscuitto

Directions

Mix everything together, pour in 6 greased muffins tins and bake at 350 for about 30 minutes. You can add a slice of bread or ham in the bottom of each tin (not included in the calories). Serve with a salad. Enjoy!!
