    1 1/2 pounds fresh scallops
    1 tablespoon olive oil
    2 cups dry white wine or dry vermouth
    4 shallots, chopped
    2 pounds white button mushrooms, stemmed and quartered
    2 tablespoons chopped fresh parsley
    1/2 teaspoon salt
    1/2 teaspoon dried marjoram


Rinse the scallops in cool water and pat dry. Add the olive oil to a large nonstick skillet that has been heated on medium-high heat. Sear scallops on all sides to a golden color.

Add wine and simmer the scallops in the wine for 5 minutes.

Remove scallops and set aside. Bring the liquid to a boil. Add the shallots and mushrooms. Cook until most of the liquid is absorbed. Add parsley, salt and marjoram, then return the scallops to the sauce and heat through.

  • I love scallops and plan to make them tonight. My only concern is cooking the scallops for five minutes. Usually, when I sear scallops they are finished and cooked in 5 minutes TOTAL, including searing. Scallops turn very gh if overcooked. The recipe sounds good, if I make it, I will post a review. - 7/26/08
