    2 whole chicken breasts
    1 large egg
    1 cup Panko breadcrumbs
    2 tbs Parmesan cheese
    2 tsp Italian seasoning
    2 cups spaghetti sauce (jarred or canned)
    1 cup mozzarella cheese


Preheat oven to 350 degrees. Spray a glass baking dish with cooking spray.

Half each chicken breast lengthwise.

In shallow dish, beat egg. In a separate shallow dish, combine bread crumbs, parmesan cheese, and italian seasoning.

Dip chicken in egg, then into breadcrumb mixture. Place in baking dish and cook covered for 20 minutes. Remove cover, add sauce to pan and top each breast with 1/4 cup mozzarella cheese. Cook for an additional 20 minutes, uncovered.

Makes 4 servings.
