    Spring Onion, 2
    Garlic, 1 clove
    Fresh breadcrumbs, 40 grams
    Grated lemon rind from 1 lemon
    Parsley, 3 tbsp
    Parmesan Cheese, grated, 30 grams
    Salt & Pepper
    Mussels 1kg
    Virgin Olive Oil Spray


1. Clean Mussels
2. Heat half the oil in a large pan and fry the spring onion and garlic for 2-3 minutes until softened. Add mussels and wine and cook over a high heat, covered, and shaking the pan for 2-3 minutes until the mussels have opened.
3. Discard any mussels that remain closed. Drain the remaining mussels, keeping the cooking juice. DIscard the tops of the mussels. If necessary, reduce the cooking juices down to 3 tbsp by cooking on high heat.
4. Mix the breadcrumbs, lemon rind, parsley, parmesan and the reserved cooking juices together with salt and pepper to taste.
5. Preheat the grill to high. Spoon a little of the breadcrumb mixture into each mussel half shell and arrange in a oven proof dish.
6. Sprinkle the remaining oil over the mussels and cook under the preheated grill for 2-3 minutes until bubbling.

Serve immediately

Makes 4 servings of approximately 35 mussels each
