    1 tbsp olive oil
    1 bell pepper - green
    1 onion - medium
    1 1/2 lbs. of boneless chicken breast
    1/2 tsp salt
    1/4 tsp black pepper
    2 slices turkey bacon
    1/4 cup of white wine (your favorite)
    2 tsp minced garlic
    1 can (15oz) whole tomatoes in puree
    2/3 cup water
    1/4 tsp oregano
    1/2 tsp ground cumin
    1/4 tsp thyme
    Texas pete (or your favorite hot sauce) to your satisfaction
    (I use 1 tsp)
    1 can cut green beans


Heat oil in a large skillet. Add bell pepper and onion; cook till tender. Move to a bowl.
Add chicken to the skillet with salt and pepper and brown. Add bacon and garlic and brown, then add wine and cook another minute.
Stir in tomatoes, pepper mixture, water, cumin, oregano, thyme, and hot sauce.
Add green beans, and reduce heat to simmer. Keep covered for 20 minutes.

Serve over rice. (Rice is not included in Nutritional information)
