Ingredients

    two stalks med sized celery stalks chopped large chunks
    three med carrots sliced large chunks
    1 med onion
    1 red pepper
    1 pkg sausage patties sweet or hot (4 patties)
    broken up
    1 large squash summer
    3 cups zucchini both cut up lge pieces
    1 small can tomato sauce
    1 can diced tomatos w/roasted garlic
    1/2 six ounce can tomato paste
    5 small red potatoes cut into lge chunks
    1 cup green beans

Directions

heat olive oil. Place into Large pot all vegies ( excluding potatoes) and sausage and brown. Cook until carrots are tender. Add water, tomato paste, sauce. Season to taste. Bring to a boil stirring occasionally. Add potatoes. Lower heat and simmer about two hours. Serves about 12 cups.
