    1/4 cup cornstarch
    1/3 cup brown sugar
    1 cup water
    1 cup soy sauce
    1/4 cup lime juice
    1/8 tsp red pepper flakes or to taste
    1/2 tsp fresh minced ginger

    Stir fry:
    1 lb chicken breast. thinly sliced
    2 cups sliced carrot
    1.5 cup sliced onion
    1.5 cups sliced celery
    2 cups sliced bell pepper
    3 cups chopped broccoli
    2 tsp fresh minced ginger
    3 cloves of garlic, minced

    4 cups cooked short grain brown rice (2 cups uncooked)


Brown rice takes about 55 minutes to cook, so start with that.

after the rice as been cooking about 30 minutes begin the stir fry.

Mix all sauce ingredients and set aside.

Add the oil and heat wok over medium/high heat. add the carrots, onion and celery, cook 5 minutes, stirring often.
add the chicken and cook about 5 minutes, stirring often
then add the broccoli and peppers and saute another 5 minutes or so. until broccoli is bright green. Add garlic and ginger and fry for 3 or so minutes more.

whisk sauce again before adding to the stir fry, continue to cook until thickened.
Serve over hot brown rice.

makes 8 servings of 1/2 cup rice and 1 cup stir fry
