A hearty, richly-flavored rice dish that makes a great cold weather lunch. A hearty, richly-flavored rice dish that makes a great cold weather lunch.
Number of Servings: 6


    2 cups boiling water
    2/3 cup uncooked wild rice
    3 Tbsp olive oil
    1 bunch of green onions (chopped)
    2 links Amylu Chicken Andouille Sausage
    1 can Campbell's Chicken w/ White & Wild Rice Soup (Light)
    1/2 cup water
    1 bay leaf
    1/2 tsp salt
    1 tsp freshly ground black pepper
    3 cloves garlic (minced)
    1 tsp paprika
    1 cup fresh mushrooms (sliced)


1) Pour 2 cups boiling water over rice. Cover & let stand for 15 minutes. Drain.
2) Saute chopped scallions (green onions) in olive oil until glossy. Set aside.
3) Remove sausage from casings. Brown sausage until crumbly. Drain & pat with paper towel to remove excess oil.
4) In a 2-quart baking dish, combine rice, sausage, onions with the remaining ingredients.
5) Bake covered for 2 hours at 325 degrees. Stir twice during baking time.

Makes 6 1-cup servings. Remove bay leaf before serving.
