An easy, satisfying, one-pot meal that's perfect for the chilly months. An easy, satisfying, one-pot meal that's perfect for the chilly months.
Number of Servings: 8


    1 medium sized onion, chopped
    2 or 3 garlic cloves, minced
    1 lb ground turkey
    1 can corn
    3 cans diced tomatoes (or you can used stewed)
    1 can black beans
    1 can red kidney beans
    Chili powder (to taste---I like mine spicy so I use at least 3 tbsp)
    Cayenne Pepper (to taste, about 1 tsp)


In a large pot, cook onions in a bit of olive oil until translucent. Add diced garlic, cook about 1 minute. Add turkey and cook until no longer pink. Add tomatoes, chili powder and cayenne pepper (more or less, to taste), mix well and simmer. (I cook it for at least an hour to let the flavors marry.) Add beans and corn, stir and cook for another 20-30 minutes. Serve hot! Because one serving is so few calories, I like to add a little cheddar cheese and a dollop of low fat sour cream, but that is not included in the nutritional info here.

Makes a large pot of chili---at least 8 servings.
