Introduction

A delicious and very filling soup. A family friend always used to make this, but I have tweaked his recipe a bit. A delicious and very filling soup. A family friend always used to make this, but I have tweaked his recipe a bit.
Number of Servings: 12

Ingredients

    1 box of organic vegetable broth (sometimes I use 2)
    Two 14.5 oz. cans of diced tomatoes, no salt added
    1.5 cup of fresh mushrooms (may also use jarred)
    1 red onion, chopped
    Package of Barilla 3-cheese tortellini
    Fresh spinach, around 3 cups
    Crushed red pepper to taste
    2 cloves of garlic
    Salt and pepper to taste

Directions

Combine all ingredients, except for the spinach and the tortellini, in a large stock pot.

Bring to a boil.

Add the tortellini and cook according to the package's instructions.

When the tortellini is almost done, add in the fresh, washed spinach. (Adding the spinach at the end keeps it from wilting too much and becoming too gooey.)

When pasta is cooked, the soup is done! Enjoy.
