Introduction
Watched Ellie Krieger make something similar on the Food Network and changed her recipe slightly. Turned out fantastic and both my husband and I enjoyed it. Ingredients

1 c long grain brown rice
1 can Progresso French onion soup
2 tsp olive oil
1 stalk celery, diced
1 large carrot, diced
1 small onion, diced
2 tsp minced garlic
1 tsp cumin
1 tsp oregano
1/2 tsp red pepper flakes
1 can black beans, rinsed
2 c fresh baby spinach
2 T chopped fresh parsley (optional)
Directions
Cook the brown rice in the french onion soup. I used a rice cooker for this and the long grain needed 50 minutes to cook til al dente. Saute diced celery, carrots, onion in olive oil til tender (5 minutes). Add garllic and spices and simmer 1 minute. Add the rinsed black beans to the veggies then when the rice is cooked add that to the mixture. May need to add 1/2 c more of water to simmer together. Add rinsed fresh spinach to the rice, cover and simmer til the spinach is cooked. Serve with fresh parsley (optional).
Makes approximately 8 1/2 c servings.
