    Ground bison (buffalo), 454 grams
    Onions, raw, 1 large, rough chopped
    Peppers, sweet, and hot, 2.5 cup, rough chop
    Mushrooms, fresh, 100 grams, sliced
    Garlic, 3 clove, minced
    Canned Tomatoes crushed, 2000 grams, including juice
    *red vermouth 1/2 oz, 1.36 oz
    Beans, red kidney, 450 grams
    Chickpeas (garbanzo beans), 340 grams
    Sweet Corn, Fresh, 1 cup
    Olive Oil, 1.25 tbsp

    Seasonings (adjust quantities to taste):
    1/8 tsp each of cinnamon and nutmeg
    1/2 tsp each of: garlic powder, dried thyme, dried oregano, cayenne, cumin, crushed pepper, chili powder
    1tsp cocoa powder
    2 bay leaves


~Heat a heavy-bottomed deep dutch oven (preferably cast iron) over medium heat.
~Brown ground buffalo, stirring occasionally. remove from pan with slotted spoon.
~Add onions, peppers, mushrooms to pan with buffalo drippings. Saute 4-5 minutes until tender. Add Olive oil. Stir. Add garlic. Cook 1 minute.
~Raise heat to high, cook for 1-2 minutes, stirring frequently.
~Pour in vermouth to de-glaze pan
~Add tomatoes and juice. Stir in beans, corn. Re-introduce buffalo.
~Season with herbs, powders and bay leaf.
~Simmer for 45 minutes.
