Mix of whole wheat pasta, lots of veggies, and some tasty chicken sausage. Mix of whole wheat pasta, lots of veggies, and some tasty chicken sausage.

    Mozzerella and Roasted Garlic Chicken Sausage, red, yellow, and orange sweet peppers, purple onions, garlic, zucchini, and whole wheat penne pasta


Slice sweet peppers into strips and then cut in half. Quarter zucchini lengthwise and cut into chunks, slice purple onion in half root to stem, and then slice. Slice sausage into 1/2 inch slices. Cook pasta according to package directions, drain, and set aside. Meanwhile, saute bell peppers, onions, and garlic in a large frying pan until they just begin to soften. Add in sausage and zucchini. Continue to cook until heated through. Add in pasta, and sprinkle with parmesan cheese, if desired. Serve immediately. Serves 6
