Number of Servings: 6

Ingredients

    1 T Olive Oil
    1 Med Onion Chopped
    1 Sweet Red Pepper, chopped into 1 - 2 inch pieces
    1 Green Pepper, chopped into 1-2 inch pieces
    2 Cloves Garlic
    1 T Chili Powder
    2 t Cumin
    1 16 oz can whole tomatoes
    1 19 oz can of red kidney beans, drained and rinsed
    1 19 oz can of black beans, drained and rinsed
    1 cup frozen corn
    1/4 t salt

Directions

Heat oil
Add onion, peppers and garlic - cook 5 minutes
Add Chili Powder and Cumin - stir 30 seconds
Stir in beans, corn and salt
Cook for about 20 minutes

Makes about 6 servings
Can be put over a little pasta or topped with cheese if desired.
