Ingredients

1 lg red bell pepper, sliced
1 lg green bell pepper, sliced
1 cubanelle pepper, sliced
1 jalapeno pepper, sliced
1 lg vidalia onion, sliced
1 Tbsp olive oil
1/2 tsp kosher salt
1/2 tsp cracked black pepper
1 1/2 lb cod fillets
Directions
Preheat oven to 400 degrees. Saute peppers and onion in olive oil over med heat until golden brown. Season Cod with salt and pepper. Spray oven proof skillet with olive oil spary. Over med high heat, sear 1 side of cod fillets until browned (about 3 minutes). Top with sauted onion and pepper. Place skillet into preheated oven and continue cooking until fish flakes easily with fork (15 - 20 minutes depending on thickness)
