Introduction

A good lowfat lasgna with lots of veggies and protein Takes a bit of time but well worth it. I like to make it a day ahead and reheat it the next day to let the flavors really meld together. Ingredients

    8 lasanga noodles
    2 C nonfat cottage cheese drained
    1/2 a package of frozen spinach (10 oz) thawed
    1/2 C raw onion chopped
    1/2 C raw green bell pepper chopped
    1 C fresh mushrooms sliced
    1 C of ragu (or any speghetti sauce)
    2 C of Tomato sauce
    1 C of water
    8 oz of mozzerella cheese part skim milk
    8 oz of 93% lean ground beef
    2 cloves of garlic
    2 tbsp of parsley, oregano, and basil
    1 egg white
    5 medium baby carrots shredded.
    5 tbsp of parmesan cheese

Directions

Preaheat oven to 350

1. In a large wok or skillet brown ground beef then drain. Add ragu, tomato sauce and water, boil then simmer for 20 minutes or so.
2. While sauce is simmering put onion, pepper, mushroom, and carrots in a food processor and pulse until chopped a bit.
3. Put drained cottage cheese in a bowl. Add chopped veggies, thawed spinach, spices, parmesan cheese and egg white. Mix well.
4.Spray a large casserole pan with nonstick cooking spray. Lay down 4 noodles spread half of the sauce ontop of uncooked noodles. Put cottage cheese mixture on sauce. Top with last 4 noodles. Put the rest of the sauce on top. Sprinkle with the cheese until covered evenly.
5. Cover wth aluminum foil and bake for an hour. Uncover after an hour and bake 15 min until cheese is a bit browned.
