Ingredients
-
1 Pkg Johnsonville Beer Brautwurst
1/2 Large Yellow Onion, diced
2 Med Zucchinis, chopped
1 C Mushrooms, chopped
1 Tbs Margarine, butter, olive oil
1/2 Large Summer Squash
Directions
Cook the brauts according to the directions (i.e. skillet method, add half cup water & simmer for 15 minutes) While the brauts are cooking, pierce the summer squash and Microwave for 12 minutes.
Remove the brauts from the cooking water, should be cooked down at this point... add the veggies, can add a little butter as well, don't have to... Saute the veggies... while that is cooking, carefully remove the seeds from the Summer Squash and cut it half... shred the meat of the squash when you get about 2 cups and to the veggies you have in the skillet.
Chop the brauts into bite size pieces and back into the skillet, mix it all together.... ready to serve. Could add a a can of diced tomato's for added color. Will try that next time :)
Makes about 5 1 Cup servings.
