Introduction

Ingredients

2 cups fresh mushrooms
1.5 serving Oil Marinated Artichoke drained/rinsed
1/2 cup chopped green peppers
1 fresh garlic clove
2 strips of rosted red peppers
2 TBLS Olive Oil
4 servings of Egg Substitute
2 servings fat free shredded cheddar cheese
8 corn tortillas (2 per person)
Directions
Stir fry all veggies in olive oil. remove from skillett. Then spray with cooking spray and add egg to skillett and sprinkle cheese. Cook omelet until done. Divide into 4 sections.
Cut each section into 2 for a person and use 2 tortillla, warmed. Add 1/4 of the veggie mixture on top. Roll tortillla. Add jalapeno and sulsa as desired.
