    1 tbsp olive oil
    1 onion, diced
    1 large clove garlic, minced
    1 32-ounce container chicken broth
    2 1/2 cups cooked red beans, drained
    1 green bell pepper, diced
    1 pound chicken or turkey, diced or shredded
    1 tbsp chili powder
    1/2 tsp chipotle chili powder
    1 tsp salt
    juice of 1 small lime


In a heavy bottomed stockpot, heat olive oil over medium heat. Saute onion and garlic until translucent. Add chicken broth and remaining ingredients and bring to a simmer. Simmer over medium-low heat, stirring occasionally, for 30 minutes.
