A lighter taco casserole, with ground turkey and only a little cheese. A lighter taco casserole, with ground turkey and only a little cheese.
Number of Servings: 4


    8 oz. ground turkey
    1 can Old El Paso refried beans (or other brand, adjust for calories)
    4 oz. crushed tortilla chips
    3/4 cup frozen whole-kernel corn
    2 oz. cheddar cheese, shredded.
    Taco seasonings or chili powder, onion powder and cumin to taste


Cook ground turkey seasoned with taco seasoning or other seasonings to taste. Mix refried beans and corn into pan.

Crush tortilla chips and line botton of 9 inch square glass dish. Pour meat/bean/corn mixture over the chips and bake for about 20 minutes at 350 degrees.

Sprinkle cheddar cheese over all and put back into oven for 10 to 15 minutes until cheese is melted and begins to brown.
