Introduction

Number of Servings: 6

Ingredients

    24 ounces boneless skinless chicken breast
    2-cans sweet corn (1 drained, 1 not drained0
    1-can Black beans (drained and rinsed)
    20 OZ of your favorite salsa (I use medium and mild mix)
    2 cups chicken broth
    1 cup long grain brown rice
    2 sweet onions coarsely chopped
    3 stalks of celery finely chopped
    1/2 tsp garlic salt
    1/2 tsp onion powder
    Fajita seasoning

Directions

1) Generously coat the chicken in the Fajita seasoning garlic salt and onion powder and let marinate over night or for at least 30 minutes.

2) Place chicken in bottom of crock pot, then add the onions and celery, then the rice, then the stock, then the salsa.

3) Cook on low for 8 hours

4) After 7 hours add the drained and rinsed black beans, and the 2 cans of corn (One drained, the other not drained) and stir the whole mixture.

5) After 8 hours turn the crock pot off and shred the chicken in the pot and mix everything together very well.

6) You can add sour cream and shredded cheese to each bowl individually or add the sour cream into the pot and stir, topping with the shredded cheese. That goes to preference.

Each serving is about 1-1/2 of mixture. Very delicious and VERY healthy.
