    1 andouille sausage, diced into small cubes
    1/4 onion, chopped
    1 cup spinach
    2 egg whites
    1/2 cup shredded Kraft 2% Colby-Jack cheese
    1/4 cup skim milk
    Pillsbury Seamless Crescent Dough Sheet
    seasonings, to taste


Preheat oven to 375 degrees F and lightly grease 12 muffin tins with non-stick spray. Set aside.

Put sausage and onion in a lightly greased pan on medium-high heat. Cook until onion is translucent and sausage is cooked through. Add spinach. When spinach is wilted, remove from heat.

In a small bowl, scramble the eggs, skim milk, cheese, and spices.

Cut the dough sheet into 12 equal-sized squares. Press into muffin tins and top each cup with some of the sausage-veggie mix. Top with egg-cheese mix.

Bake at 375 F for 15 minutes or until dough is brown and egg mixture is puffed up and cooked throughout. Remove from oven and let cool in pan for 5 minutes before serving.

Makes 6 servings - 2 puffs each serving.
