Ingredients

    Casserole:
    4 cups Brown Rice, Cooked
    1 cup Red Bell Pepper, Chopped
    1/4 cup Green Onion, Chopped
    1 cup Corn, Canned, Drained
    2 cups Cheese, Shredded
    few drops of Tabasco Sauce (optional)

    Topping:
    1 cup Yogourt, Plain
    1/2 cup Parmesan
    30 Croutons (crushed into crumbs)

Directions

Casserole:
Mix and pour rice, red pepper, green onion, corn, cheese and Tobasco sauce into an oven safe casserole dish.

Topping:
Spread Yogourt over mixture. Combine crouton crumbs and parmesan and sprinkle over yogourt.

Bake at 400 for 20-30 minutes.
