Ingredients

    1 Tbsp Sunflower Oil
    1 large Leek , sliced
    2 Celery stalks, chopped
    4 cups Sweet Potato, diced
    4 cups Chicken stock
    Salt and Pepper to taste

    Garnish
    parsley
    toasted strips of sweet potato and parsnips

Directions

Serves 8, 1 cup each

Saute leeks, celery, sweet potatoes, parsnips for about 5 minutes.

Add stock, bring to a boil and simmer for 25 minutes.

When cool add soup to food processor and process until smooth

Return and reheat, Laddle warm soup into bowls add garnish and serve
