Ingredients

    3 boneless, skinless chicken breasts, cut in half
    1/4 cup freshly squeezed orange juice
    1 teaspoon grated orange zest
    1/4 cup freshly squeezed lime juice
    2 tablespoons extra-virgin olive oil
    2 tablespoons cilantro, chopped
    2 cloves garlic, minced
    1 teaspoon grated ginger root
    1/2 teaspoon cumin
    1/2 teaspoon oregano
    1/2 teaspoon chili powder
    1/2 teaspoon coarse kosher salt
    1/4 teaspoon coarsely ground black pepper

Directions

Mix all of the seasonings together to make the marinade. Place the chicken into a heavy, large zip-style bag and pour in the marinade. Zip up and shake, squeeze, or otherwise mix the ingredients to coat the chicken. Set aside for 10 minutes; if it's going to be longer before you grill, I recommend placing the bag in a bowl in the refridgerator. Grill over medium-high heat about 5 minutes per side (160F minimum). Remove from grill to a sheet of aluminum foil large enough to very lightly wrap the chicken, let rest for a few minutes (not long) and serve. I usually add the Caribbean black beans and rice and a mixed veggie as sides.
