    4 Boneless Pork Cutlets; 6 oz each
    1 Tblsp Olive Oil
    1 medium Onions, minced
    1 clove Garlic, minced
    2 Tblsp Flour
    2 Tblsp Tomato Paste
    .75 cup Madeia or Red Wine
    1 cup Beef stock
    1.5 cup Prunes,chopped
    salt and pepper to taste


Preheat oven to 350 degrees.
Season pork with salt and pepper to taste.
In a large pan, heat olive oil, then sear each side of the pork.
Transfer pork to an oven-safe ceramic dish and contine to cook for 25 minutes, or until juices run clear when meat is pierced.

Meanwhile, add onion to stove-top pan and cook over medium heat until soft. add garlic and cook for a minute. Add flour gradually, stirring with wooden spoon until a brown paste starts to form. Increase heat and add tomato paste, wine and stock.

Boil until sauce is reduced to half its volume. Remove from heat and add prunes and sprinkle with pepper and salt to taste. Serve chops with sauce over top.
