Introduction

Ingredients

    1 egg
    4 egg whites
    .1/4 Cup 1% Milk
    4 slices Deli Ham
    1/2 Yellow Pepper
    1 cup fresh spinach
    1/2 cup Shredded Mozzerella

Directions

Cut Ham and Yellow Pepper into small pieces and wash the Spinach.

Preheat oven to 350

In a small pan, coat with Pam Olive Oil spray. When heates saute Ham, Pepper and Spinach. Meanwhile prepare the eggs by putting in one whole egg and four egg whites. Beat together with 1/4 cup of milk.

When the spinach is reduced and pepper and ham are sauteed, add the eggs over medium to high heat. Cook until set about half way through. Remove from stove top and put in the oven. Bake in frying pan 10 minutes. At this point top with Mozzarella cheese and bake another 7-10 minutes.
