Ingredients

    1 tbsp olive oil
    1/2 large onion, chopped
    1 garlic clove, minced
    1 tsp salt
    1 bell pepper, chopped fine
    1 28 oz can diced tomatoes
    16 oz ziti pasta, cooked al dente (2 min less than pkg directions recommended)
    2 c mozzarella, shredded
    1/2 cup parmesan, grated

Directions

preheat oven to 350

saute the onion, bell pepper and salt for 4 minutes. add the garlic and cook another 2 minutes.

add the tomatoes and cook the sauce for 15 minutes over medium heat. the sauce will thicken as it cooks

combine the sauce, pasta and cheeses in a bowl and pour into a casserole dish sprayed with nonstick cooking spray (can be prepared up to this point the night before).

bake uncovered for 30 minutes.
