Number of Servings: 6


    2 Tbls Olive oil
    1 lb boneless pork, cubed
    2 cups chopped onions
    1.5 tsp Ancho Chili Powder
    1.5 tsp Ground Cumin
    1.5 tsp Garlic Powder
    2 Tbls Chili Powder
    1.5 tsp Oregano
    2 cans, (4 cups) Cannellini Beans, Drained and rinsed
    1 can Chicken Broth
    1 Avocado, peeled, pitted and diced
    2 Tbls Fresh chopped Cilantro
    1 oz Lime Juice


Heat 1 Tbls Olive Oil in large skillet over medium heat. Add 1/2 of the pork, and brown on all sides. Remove from pan and repeat with the remaining pork.
(Add additional oil as needed)
Remove pork and add onions to skillet, cook for about 4 minutes or until they are translucent, add the rest of the seasonings and cook for about 1 minute or until they are fragrant. Add pork back to skillet with drained beans and chicken broth, stir to mix and bring to a boil. Reduce heat to simmer, and cook for another 15 to 20 minutes, or until pork is tender and cooked through.
Mix diced Avocado, Lime Juice and Cilantro in a seperate bowl. Add to each serving as desired.
