    1 or 1.5 lb cooked, skinned, deboned chicken
    1 3.8 ounce can sliced black olives
    3 cups enchilada sauce
    8 6 inch corn tortillas
    1/2 cup canola oil
    1.5 cups fat free cheddar cheese
    1/2 cup fat free sour cream
    1 cup chopped scallions


cook chicken

in a medium bowl combine diced chicken, olives, cheese and some enchillada sauce, about one can. Mix well.

Add oil to a medium skillet over medium heat. Using tongs dip the tortillas intot he oil and fry each tortilla for a few seconds. Just long enough that they are limp and not crispy.

Fill the fried tortilla with mixture, fold over tortilla and place in baking dish, fold side down. Repeat for the remaining tortillas. Pour the remaining enchilada sauce over the enchiladas.

Bak for 15-20 minutes. Serve each with a dollop of sour cream and green onions.
