Ingredients

    1 1/4 cups - whole wheat flour
    1 tsp baking soda
    1/4 teaspoon kosher salt
    1/2 cup Eggbeaters, room temperature
    1/2 tsp vanilla extract
    8 tbsp (1/2 cup) Bestlife Buttery Baking Sticks, room temperature
    24 packets (1/3 cup & 1 tbsp) Truvia Natural Sweetener
    1 cup very ripe bananas, mashed (about 3 medium sized)
    1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees.

Lightly 'grease' the sides of a 9x5x3 inch loaf pan with the Bestlife Buttery Baking Stick.

Sift flour, baking soda and salt into a medium sized bowl. In a separate bowl, whisk eggs & vanilla. Using an electric mixer, cream the Bestlife Sticks and Truvia until light and fluffy. Then gradually add the egg mixture while mixing until incorporated. Add the mashed bananas (it may look curdled, like cottage cheese, but that's okay).

Mix in flour mixture until just combined. Fold in the walnuts and move batter to the loaf pan. Bake approximately 55 minutes or until a toothpick inserted into the center comes out clean.

Cool bread in the loaf pan for 5 minutes before turning bread out. Let it cool completely and store in plastic wrap. This bread tastes better as it cools and is best when served the next day!

NOTE: If you prefer to use Splenda instead of Truvia, use 1 cup. But keep in mind the Nutrition Info is figured for Truvia.
