    2 c. Instant White Rice
    1 (10 3/4 oz.) can Condensed 98% Fat Free Cream of Mushroom Soup
    2 c. skim milk
    1/4 reduced fat or lowfat mayonnaise or salad dressing
    2 c. peas, frozen
    1 c. shredded cheddar cheese*


Preheat oven to 425 degrees. Mix first 5 ingredients in a 2-quart oven-safe dish; cover with foil and bake for 20 minutes.

Uncover; sprinkle with cheese and bake uncovered for an additional 10-12 minutes until rice is tender and cheese is melted.

Makes 6 servings.

*You can substitute a healthier cheese or omit to meet your dietary needs and/or personal taste.
