Ingredients

2 tsp olive oil
1 cup chopped onion
2 cups chopped or shredded mushrooms
1 cup uncooked barley
3 cups vegetable broth
Directions
Cook ionion in olive oil approx 5 minutes. Added shredded or chopped mushrooms and cook approx 5 minutes. Add vegetable broth, barley, and 1 tsp salt (to taste) and bring to boil. Partially cover pan and reduce heat to low; simmer until barley is tender, stirring occasionally (approx 60 minutes).
Yields 1 cup per serving.
