A creamy fat free chicken and mushroom soup. A creamy fat free chicken and mushroom soup.
Number of Servings: 16


    1 gallon of water, 8 Oz fat free chicken, 1 cup of diced fresh mushrooms, 1 tabls. salt 1 cup of flour mixed into 2 cups cold water.


Place chicken in water and simmer for 20 minutes. If you use left over chicken prepare this the night before and then skim all of the fat off the top and disgard the fat. After the fat is removed, remove any bones that remain in the broth. Add diced mushrooms and heat to a simmer. Dissolve the flour in 2 cups of COLD water and add to the soup to thicken it. Heat until the soup has boiled for 1 minute. If you want a brothy soup omit the flour. Add salt to taste. Serve hot.
