Number of Servings: 12


    1 cup whole wheat flour
    1 cup bran
    ½ cup dry oats
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp ginger
    1 pinch cloves
    ½ cup brown sugar
    1 egg
    1/3 cup unsweetened applesauce
    1 3/4 cups puréed yam
    3/4 cup 2% milk plus 1/2 Tbsp lemon juice


Preheat oven to 375° F and grease a muffin pan (12 muffins).

Measure and stir dry ingredients, including spices, in a large mixing bowl. Stir in pecans.

In a medium bowl, whisk together egg, applesauce, brown sugar, and milk. Add puréed yam and combine well.

Make a well in the dry ingredients and pour in the moist ingredients all at once. Stir sparingly (floury lumps are expected) and spoon into greased muffin tin.

Bake at 375° F for 25-30 minutes, testing with a cake tester for doneness. Cool for ten minutes in pan then remove to cooling rack.
