Ingredients

    1 can fat free refried beans
    1 can corn
    1 can chopped tomatoes
    1 can chicken broth
    1 can black beans

Directions

Mix all ingredients together and simmer for 30 minutes. Makes 5 servings and freezes well.

    This is by far the BEST recipe I've gotten from this site. We make it at least once a week. It is a very easy recipe to spice up-sometimes we use salsa rather than just tomatoes, it adds an additional flavor level and tastes just as great. - 12/7/11

    I needed something quick with ingredients I had on hand. I decided to try this soup, but didn't have high expectations. When I added the ingredients, it really did not look very good. The end result however, was much better than I anticipated. Quite good and filling, I'll be making often! - 10/18/13

    Followed the recipe as written--pretty decent little vegetable soup. Then I chopped in what remained of a leftover chicken--major improvement! Then I added chili and cilantro--added interest, but depends on personal taste. Then I added chopped Jalapeno--help me! - 6/20/12

    Very Good
    Good soup! I sautéed some garlic and onion in a little evoo before adding the ingredients and I also added cumin and chili powder. Yum! - 3/8/12

    This is such an easy soup and it is delicious. I added fresh lime and fresh cilantro as well as some cumin. For the can of tomatoes I used 1 can of mild ro-tel. And everything was low-sodium. Very filling and it lasted several days. - 2/13/12

    It was quick and easy to make and I think it tasted similar to a tortilla soup that takes a bit more effort. It was also inexpensive! I came up with 7 1-cup servings. I wasn't sure which size of cans to use for the ingredients. - 1/19/11
