Introduction

I needed a quick dinner and we had some "Quick Barley" from Quaker in the pantry. What better on a night when a snow storm is rolling in?! I needed a quick dinner and we had some "Quick Barley" from Quaker in the pantry. What better on a night when a snow storm is rolling in?!
Number of Servings: 6

Ingredients

    -4 C Fat Free chicken broth like Aldi's Fit and Active
    -1 1/2 C chopped onions, I like white
    -6 oz baby carrots, chopped in half then sliced
    -1 clove of garlic, minced
    -1/4 t black pepper
    -1 t dried parsley
    -1 C quick cooking barley like Quaker's Quick Barley
    -8 oz cooked boneless skinless chicken breast like Tenderbird

Directions

---Put the broth, garlic, carrots and onions in a med. to large pot and bring to a boil. Add your seasonings, stir and continue to cook over med/ high heat.

-- Add your barley and cook for 10 minutes, stirring occasionally. If your chicken is warm, then turn off the heat and add the chicken and stir. Otherwise, add the chicken and stir and cook until warm.

--Makes 6 servings of 1 C each.
