A quick hearty chicken and dumpling recipe for cold day comfort. A quick hearty chicken and dumpling recipe for cold day comfort.
Number of Servings: 10


    1 pound chicken tenders
    1/4 cup slivered onions
    2 tbs olive oil
    1 can reduced sodium chicken broth (low fat if available)
    1 can reduced sodium cream of chicken soup
    1 tbs black pepper (or cracked pepper medley)
    1/2 tsp sea salt
    4 8-inch flour tortillas


Cut chicken tenders in approximately 1 inch sections
(or you might strip them in narrow sections for quick cooking).
Very lightly brown chicken in stock pot with 1 tbsp olive oil.
Pour in 1 can chicken broth and 4 cans of water. Add onions, pepper, and sea salt. Simmer for 15 minutes. Increase heat to rolling boil.
While increasing heat slice tortillas into 1 1/2 to 2 inch strips, and cut strips to 3-4 inches long.
While mixture is boiling drop tortillas into broth. Immerse strips into boiling broth so they don't stick together.
Reduce heat and simmer 3-5 minutes.
While simmering, gently add cream of chicken soup into broth, taking care not to break up tortillas.
Next gently break each egg into broth. Do not stir . Eggs should 'poach' as they submerge into broth. Let eggs set.
Reduce heat to lowest setting. Dribble remaining 1 tbsp of olive oil into mixture.
Serve hot by dipping into dumplings and chicken and an egg, if preferred. Delicious.
