A spicy, warm treat for any season. A spicy, warm treat for any season.

    1 T EVOO
    2 sweet potatoes (or one giant), chopped
    1 leek, white and light green ony, chopped
    1 T freshly grated ginger

    pinch Cayenne, salt & peppa
    1 t ground coriander
    1 t ground cumin
    3 C chicken stock


Saute potato, leek and ginger in EVOO for 13 minutes. Add spices, stir well. Add stock, bring to boil, turn down and simmer uncovered for 15 minutes. Pulse in a food processor, serve hot!
Not included in nutritional breakdown: you can garnish with a dollop of sour cream and squirt of fresh lemon.
