    Cumin, Chili Powder, Garlic salt, Chipolte seasoning


Rinse the beans and corn. I add the beans, corn, spices and vinegar to a small pot and simmer on med-low.
In a separate pan add the oil, chopped onion and carrots and garlic if you like, saute until the edges are see-through. Add the onions, garlic (if you like) and carrots to the simmering beans and corn. Simmer until the carrots are tender. Cool. Enjoy with chips, in lettuce wraps, over rice or by itself!
