    1tsp kosher salt
    1 tblsp olive oil
    2 c brown rice,cooked
    1 med onion,chopped (1c)
    1 lg green or red pepper,chopped (1.5c)
    2 med garlic cloves,minced (1tblsp)
    2- 15oz cans black beans,undrained
    1 cup chicken broth
    2 tblsp red wine vinegar
    2 bay leaves
    1/2 tsp freshly ground black pepper
    1/4 tsp grd cumin
    1/2 cup sliced scallions (optional)


In large saucepan,heat olive oil over medium heat. Saute the onion,green or red pepper, and garlic until the vegetables have softened, about 5 mins. Add the beans, broth,vinegar,bay leaves,black pepper,cumin, and salt. Cover and bring to a boil. Reduce heat to low and letg simmer for 10 mins;remove the bay leaves. Spoon the beans over cooked rice and sprinkle with the sacllions, if desired. Serve warm. Makes 4 servings.
