Ingredients

    for 1 serving:
    3 oz salmon
    6oz green beans
    1 oz fresh baby spinach
    abut 10 cherry tomatoes, halved
    1 scallion, chopped
    1 tablespoon capers
    juice of one lemon
    i clove garlic, crushed
    1 teaspoon olive oil
    1 teaspoon dijon or seed mustard
    i tablespoon chopped flat leaf parsley

Directions

Blanch beans in boiling water for 3-4 mins, remove from water and rinse with cold water. Poach salmon in same hot water for about 5 mins. Combine spinach, tomatoes, parsley, capers and green beans, add salmon. Pour over combined olive oil, mustard, garlic, mustard and lemon juice. Season with slat and pepper.
