    Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)

    Margarine, 70% vegetable oil spread, 2 tbsp

    Salt, .75 tsp

    Pepper, black, .25 tbsp

    Cheddar Cheese, .25 cup, shredded


Scrub potatoes and pat dry. Bake in a 350 degree oven for 45 to 50 minutes or until cooked through and fork tender. Cut potatoes in half lengthwise. Scoop out the inside of the potato and mash or put in a food processor with the butter, salt, pepper, and cheese. Blend everything together to desired consistency. I like to make it really creamy. Pile potato mix into only 6 of the shells. Bake in a 425 degree oven for around 15 minutes or until cheese is melty and gooey. Serves 6.
