Vegetarian Black-Eyed peas & mustard greens salad. Serve warm or cool. Vegetarian Black-Eyed peas & mustard greens salad. Serve warm or cool.

    2 vegetarain bacon slices, broken into bits after cooking
    4 cups mustard greens, stems removed, torn or chiffonade
    1/4 teaspoon sea salt
    1/4 teaspoon black pepper
    1 tablespoon extra-virgin olive oil
    1/2 cup chopped leeks (or green onions)
    2 teaspoons caraway seeds
    3 garlic cloves, minced
    1 jalapeņo pepper, seeded and chopped
    2 cups cooked black-eyed peas
    1/4 cup balsamic vinegar


Cook black-eyed peas, drain (save cooking water to use for making vegetable broth).
Fry vegetarian bacon in oil (do not burn) remove & cut into small bits to use later.
Wilt mustard greens in same pan 9about 4 minutes). Remove & add to large bowl.
Saute leeks, caraway seeds, garlic & jalepeno for 1 minute. Add black-eyed peas & cook 1 more minute. Add balsamic vinegar & bring to a boil.
Add pea mixture to mustard greens. Sprinkle with vegetarian bacon bits just before serving.
