    3 Cups prepared Brown Rice
    2 Cups Red Kidney Beans
    1/2 Cup Strained Yogurt
    1/2 Cup Fat Free Mozzarella Cheese, shredded
    1 Medium to large White Onion, cut into thin strips
    1/2 TBS Extra Virgin Olive Oil


Heat the olive oil in a saute pan and add the onions. Cook until caramelized. Add beans and toss until heated through. Add the prepared rise and heat for a minute longer while stirring everything together. Portion onto plates and top with the mozzarella cheese. Enjoy this with a fresh garden salad if you have this as a main dish. Serve in smaller portions along side a main dish such as grilled chicken or fish.
