    olive oil, 1/2 pound boneless skinless chicken tenders, salt, pepper, 4 cloves garlic, 1 medium onion, 2 stalks celery, tsp cumin, 1/2 tsp red pepper, tsp chili powder, 2 cans rotel, 1/2 cup frozen corn, 1 can ortego black beans 2 cans fat free chicken broth 1 chicken bouillion cube, cilantro


Heat olive oil in pot on medium low heat, add cubed chicken, season with salt and pepper, cook through,add chopped onion, minced garlic, and chopped celery, add cumin, chili powder, and red pepper, cook until softened, add rotel with juice, add drained black beans, add frozen corn, add chicken broth and bouillon cube, bring to a boil then reduce heat to a simmer, simmer for 20 mins, add cilantro at end of cooking time, serve with crunched tortilla chips, sour cream, or cheese
