Ingredients

    6 eggs
    1 can black beans
    1 can diced tomatoes
    1 can mexicorn
    1 small can diced green chiles
    .5 c light sour cream
    1 lb lowfat cottage cheese
    1/2 c cooked brown rice
    1/2 c cooked white rice

    Spice to taste: I use cumin, chili powder, garlic powder, onion powder, and seasoned salt.

Directions

Mix everything together in a large bowl, and bake in a casserole dish for 1 hour at 350 degrees.
