Ooey, Gooey yummy Banana muffins. Ooey, Gooey yummy Banana muffins.
Number of Servings: 12


    2 Cups Banana, mashed (3-4)
    2 Cups Wheat UNENRICHED Flour
    2 tsp Baking Soda
    1 tsp Cinnamon
    2 tsp Pumpkin Pie Spice

    1 Cup Brown Sugar
    3/4 Cup margarine OR canola oil
    2 Eggs

    PAM for Baking


1. Preheat Oven to 325F.
2. Sift Dry ingredients together in a small bowl.
3. Whip sugar and margarine (or oil) together in a large bowl.
4. Add eggs one at a time.
5. Gradually add flour mixture to wet mixture.
6. Add mashed banana.
7. Spray muffin tins.
8. Fill 3/4 in each cup.
9. Bake for 35 minutes.

  • How is this low fat? It has 3/4 cup oil. I don't see how banana muffins could possibly need that much oil. Banana alone should make it moist. - 9/20/07
