Ingredients

1/2 cup Black beans
2 tbsp Cilantro (dried)
8 oz low fat chedder cheese
6 oz chicken breast (about 1.5 breasts) fried and cut into small pieces
1 7 oz whole grain loaf french bread (ends cut off)
pinch sea salt & cayenne pepper
Directions
Place beans, 1/8 cup water & 2 tbsp cilantro in food processor, blend until smooth. Season with sea salt and cayenne pepper. Scrape into sealable container. Set aside.
Slice french bread into 1/4 inch slices (about 16 slices).
Spray both sides with cooking spray or lightly brush with olive oil.
Spread 1 tbsp bean spread onto 8 of french bread slices, top remaining with 1 oz cheese and 1 oz chicken. Sandwich together.
Preheat non-stick skillet over medium heat, mist with cooking spray. Cook sandwiches 2-3 minutes on each side. Serve immidiately. Enjoy :)
