    3 Boneless/Skinless Chicken Breasts
    3 cups celery, sliced diagonally
    2 large onions, sliced with the grain
    6 cloves garlic, crushed
    1/2 cup oyster sauce
    2 tsp soy sauce paste*
    2 tsp sherry
    1/2 tsp white pepper
    2 tsp coarse ground black pepper
    1 tsp peanut oil
    1 cup medium grain brown rice

    *can be purchased in most Asian markets


Cook rice per package directions. Cut chicken in bite sized pieces. Slice celery diagonally and onions in strips. Combine oyster sauce, soy sauce, sherry, black and white pepper and set aside. Heat a tsp of peanut oil in a wok or large nonstick skillet over high heat. Add chicken and crushed garlic and stir fry until lightly browned. Remove chicken from pan. Add vegetables and stir fry until cooked but still crisp. Add sauce and mix with vegetables. Add chicken and stir until coated with sauce. Serve immediately over rice.
